Arepa de Maiz- Sweet Corn
AREPA de Maiz- In the Dominican Republic, Arepa is a dense, unleavened cornmeal and coconut cake. Arepa is a popular dish, and loved by all because of its simplicity in ingredients and how easy it is to make. Arepa de Maiz has cornmeal, raisins, brown sugar, and coconut milk. Elephant Ear- Oreja de Elefante
These are our famous Elephant Ear cookies, it is a French pastry in a palm leaf shape or elephant ear shape.
They are made from puff pastry, we use a dough similar to the dough used for croissant, but without the yeast. Puff pastry is made with alternating layers of dough and folded over to create possibly hundreds of flaky layers. The puff pastry is rolled out, coated with sugar, and then the two sides are rolled up together so that they meet in the middle, giving the pastry it’s shape. They are delicious and they are only $1!

Quipes
Quipes are very popular in the Dominican Republic. The Dominican Republic consists of people who arrived from many continents. It is a nation of people who all came from somewhere else: Taínos, Africans, Europeans, Asians. Many of these people came in waves, each giving bits and pieces of their culture to make what is today the Dominican Republic. Kipes, or Quipes, are a Dominicanized version of the Lebanese kibbeh. During the 19th century many Middle Eastern immigrants arrived in the Dominican Republic and brought quipes. Dominican since have taken quipe and given it their own mix. In Latin American countries the pan de agua bread is similar to Italian Bread because it’s made from the same basic ingredients, but the baking process is different.
